There is no way to make brown balls look Instagram gorgeous and sound sexy, but I am going to give it a try. Here they are in all their glory. 


The other day I went on a rampage around the house. I organized the garage, cleaned up our back yard, made homemade mint and spinach pesto (to be posted), slow cooker oatmeal and these babies. I also finally got around to hanging a few super cute vintage plates in the kitchen from my mum (to be posted) and some super easy crafted decorations in my baby's room (and yes, to be posted). I love all this sh*t, but when I pack it into one day like Martha Stewart on crack then something else in my life is usually coming unhinged. In this case I am being laid off from my job that I have had for four years and really truly loved. I am still getting my wits about me with that situation so back to the balls and more on that soon.

If you had asked me to try these, let alone make them, a few months ago I would have said a big fat NO, but this kid is getting in shape and it's making me do crazy things. They are actually pretty good and satisfy my urge to eat sugary treats. The recipe is from Naturally Delicious by Danny Sao. This cookbook is filled with beautiful photos and health conscious recipes. It was the photo that hooked me and the coconut that put me over the edge to make them.

Here is the recipe. Don't be intimidated by the ingredients. You can find them at Trader Joe's or Whole Foods.

Raw Coconut-Maca Power Poppers 
1/2 cup plus 2 tablespoons coconut flour
3 tablespoons plus 1 teaspoon maca powder
3 tablespoons cacao powder
1/2 cup unsweetened shredded coconut
3 tablespoons chia seeds
2/3 cup rolled oats
11/2 cups raw almond, peanut, or cashew butter, at room temp (I used Justin's Natural Peanut butter)
1/3 cup grade B organic maple syrup (I ended up using grade A, which seems easier to find/cheaper)
1/2 cup additional cacao powder, chia seeds, or shredded coconut (or combo) for rolling on the poppers

1. Line baking sheet with parchment paper and set aside
2. In a large bowl, whisk the coconut flour, maca powder, cacao powder, shredded coconut, chia seeds, and oats.
3. In a small bowl, mix the nut butter and maple syrup.
4. Add the butter/syrup mix to the dry ingredients and mix with your hands until you form a firm dough
5. Form approximately a tablespoon of the dough into a balls and place on the sheet.
6. Roll the balls in your choice of coatings. Store or enjoy right away.

The poppers can be stored in an airtight container for up to a week.
